Abou Bastai (Zucchini tomato stew)

Zucchini tomato stew

An easy yet delicious dish full of flavor, perfect for those days when you have little time but big appetite! Zucchini is cooked with tomato and some ground beef and served with peppered rice.















  • 1 pound chopped zucchini
  • 14 oz diced tomato
  • 1/2 pound ground beef
  • 1 clove mashed garlic
  • 1 chopped meduim onion
  • 1 tablespoon lemon juice (optional)
  • 2 tablespoon canola oil
  • 1 teaspoon crushed mint
  • 1/2 teaspoon Bharat (Syrian Spice Mix)
  • Salt and pepper to taste
Zucchini tomato stew


  1. Saute the onion in oil and add the ground beef when it becomes translucent. Brown the meat adding a pinch of salt and pepper.
  2. add the zucchini and stir with the meat for 2-3 minutes on a medium heat.
  3. add the tomato, salt, garlic, spices and mint and stir occasionally until the mixture comes to a light boil.
  4. Reduce the heat and let simmer for 15 minutes.
  5. Serve with peppered rice.

    sounds fabulous! I have had the great pleasure of sampling several of Ms. Alameen's fine dishes and I can assure anyone who tries the recipe you will not be disappointed! Feel free to cook the zucchini according to the "doneness" you prefer; most Syrians like their vegetables soft, but Americans often prefer a bit of crispness.

    After eating a loevly meal at a syrian friends house, I have been inspired to try other syrian foods, I chose this one as my first as it seems so simple. So Im giving it a go, and hoping for the best. Im sure my hubby will eat it regardless. Hes not a fussy eater... Thank you for a lovely site. Do you no any more rice recipes...x
